Abstract

Inulo oligosaccharide (IOS) is a carbohydrate, made up of a short chain of fructose molecules, classified as an oligosaccharide. IOS is produced by inulin hydrolysis after extraction. Inulin is broken down by using inulase enzymes into chains of 2-10, with an average DP of 4. In this study we designed an experimental model to determine the subtrate, enzyme concentration, temperature, and pH appropriate for inulin hydrolysis of powder from chicory. Concentration of studied enzyme is from 2.5 - 30U/g substrate, temperature range 40oC - 60oC and pH range 4-7. Enzyme concentration and temperature are the factors that greatly affect the inulin hydrolysis process of obtaining inulo-oligosaccharide by enzyme. The concentration of substrate 50g/l, concentration of enzyme 30U/g substrate and the temperature of 60oC, the highest efficiency of inulo oligosaccharide acquisition was 68 to 75%.
