Abstract

This article illustrated the results of studying and construction formula for producing emergency food rations. The products were designed to be simple, small in weight, eaten directly to create a balanced diet that contains carbohydrates, protein, and lipid as main components. A scale of 60 kg/batch production process was appropriately established with specialized manufacturing machines; the energy value of each 5-tube ration was about 2000Kcal that requires for basal metabolic rate; the ratios of carbohydrate, lipid, and protein were 50-60%, ≥ 25%, and 12-20% respectively. The product still retains its quality and meets food hygiene and safety standards after six months of storage in conditions of accelerated aging at 40ºC and 75% in humidity. The production of emergency food ration plays a significant role in maintaining health, strengthening spirits, and improving the quality of training of Navy forces in independent operation conditions on the sea.
